One of my favourite go-to recipes when I am scrambling for a meal idea is this super simple pesto recipe. I can never eat the ready made pesto from a jar anymore, knowing how quick and easy it is to make it from scratch!
The other reason that I love making pesto is because you can make a variety of different things using the sauce. Typically we have it with chicken, over pasta or as the base sauce for a pita pizza/flatbread.
I use my Blendtec blender only because we don’t have a food processor, however a food processor is better fitted for this recipe.
- 2 cups fresh basil
- 1/3 cup pine nuts
- 1/2 cup extra virgin olive oil (I use more in order to get a better blended outcome)
- 3 cloves garlic
- 1/2 cup freshly grated Parmesan-Reggiano Cheese
- 1/4 tsp salt, more to taste
- 1/8 tsp fresh ground pepper, more to taste
Add all ingredients into the blender until smooth. If using a food processor, do not add the olive oil until you pulse the other ingredients a few times. Then with the food processor on, slowly add the olive oil to the mixture. Make sure to scrape down the sides with a rubber spatula to ensure you are getting the best possible outcome.
You can also make a double batch and freeze it for up to 3 months. When you defrost it to use, you will likely have to add a bit more oil to get the texture that you want.
